Goat Cheese Herb Scramble

I am sharing with you today my quick, light and tasty Goat Cheese Herb Scramble. I have made this many times over the years with the variety of herbs I have growing in my gardens. This was a big hit with the ladies when 10 of us stayed in a cabin for a “girls” get away a few years back. They couldn’t believe how simple it was and the limited ingredients. They kept asking me, “That’s it?” and saying “It’s really good”. My husband and I just had it Sunday for breakfast with garden fresh tomatoes on the side. It fueled us before we went on a bike ride. Enjoy this for breakfast, brunch, lunch or a light dinner.

Goat Cheese Herb Scramble

1 teaspoon olive oil

5 eggs

A dash or two of cayenne pepper

Salt and freshly ground black pepper

¼ cup chopped fresh herb mix, such as; parsley, chives, tarragon, oregano, basil, dill

¼ cup crumbled goat cheese

In a non-stick skillet, heat oil over medium-high heat until hot. Meanwhile in a bowl, whisk together the eggs, cayenne pepper, salt and pepper; pour into skillet. Using a heat proof spatula, gently fold the eggs as they cook. When the eggs are almost set, add chopped herbs and fold in. when the eggs are just set sprinkle crumbled goat cheese on top and turn off the heat. Let it set a couple minutes for the cheese to begin melting.

To serve; I like to add additional fresh ground pepper, fresh sliced tomatoes with a sprinkle of salt and fresh basil on top.

This recipe is made for 2 but can easily be doubled or tripled or more.
