Freezing Rhubarb

The rhubarb is winding down. When picking rhubarb give the stalks a squeeze with your fingers, they should be firm if they feel spongy they are not good for eating. My neighbor behind me, Howard, told me I could come pick rhubarb. I was glad since I didn’t have enough to freeze.  His rhubarb is huge; the leaves are as big as a side table!  It is easy to freeze and cooks up just like fresh. Now when I have a craving for rhubarb pie, I can make one. Yhea!

Freezing Rhubarb

Pick firm rhubarb stalks, cut off the leaves; remember the leaves are poisonous and wash the stalks with cold water.

Slice into 1/2 inch pieces. Place in a freezer bag and freeze. Yes, it is that easy. Use in cooking as you would with fresh.
