Winter Pesto Sandwich

My friend came over on this cloudy/rainy day for lunch. What a way to brighten your day, spend the afternoon chatting, laughing and eating! Eating always makes me happy.

This sandwich is always a hit! Friends are so impressed, like I spent all day in the kitchen! Ha, now you know the secret and see how easy it is. No measuring needed, just use what you like.  I used the summer Italian pesto and oven dried tomatoes right out of the freezer. Come back in the summer and I will show you step by step how to create both the tomatoes and pesto. Of course, you can use your favorite pesto and sun dried tomatoes in oil-just drain them well. Try it with different breads; put it on a whole loaf of bread for 4 people, we are big eaters it may serve more. Today I have some leftover grilled chicken, turkey lunch meat works or try some Italian meats too. Pesto will jazz up any sandwich. Make the sandwich your creation, play with it and have fun.

WINTER PESTO SANDWICH
Ciabatta rolls sliced
Pesto
Light mayonnaise
Great northern beans
Chicken, grilled-sliced or shredded
Oven dried tomatoes-slivered
Provolone cheese sliced

Preheat oven or toaster oven to 350°.

Spread the top and bottom half of bread with pesto; add some mayonnaise to the pesto on each half of the bread and spread with the knife. Continue to spread the pesto and mayonnaise together until mixed into creamy goodness. In picture above one half is shown with just pesto and the other half is shown after the mayo and pesto are combined.

On the bottom half put a handful of great northern beans, press lightly into the pesto mixture, this is the glue that holds the beans in place. Top the beans with your chicken or other meat of choice. Next layer on the oven dried tomatoes, the cheese and top with the bun, press lightly. Put on a baking sheet and bake in a hot oven until toasty, 3-5 minutes. Enjoy!

*This sandwich can be made ahead of time, wrap in foil and refrigerate until needed. When baking leave foil on for a softer sandwich or unwrap for a crusty, crunchy bread. You can also put the sandwich on the grill to heat.
