What to do with Pesto

 

My niece, Madison, asked me the other day “What is Pesto?” What do you do with it? I explained the ingredients to her and how many things you can make with it.  Throughout the day I kept telling her different things to do with pesto, I could go on forever. She said, “Oh, you can do a lot with it”. I think it adds zest too just about, well, everything. I wouldn’t stir it in my oatmeal though. Here are some ideas, I’m sure I’ll think of some more and more, and more…     this should at least get you started.

Mix with mayo for a sandwich topping

Mix with Greek yogurt or cream cheese for a dip/spread. Serve with veggies or crackers.

Spread on a piece of bread top with a slice of provolone and broil until cheese melts.

Stir into your hot soup right before serving for summer freshness, great for canned soup too.

Stir into Extra Virgin Olive Oil for a dipping bread oil

Toss with raw shrimp, sauté or grill until done, toss again with fresh pesto.

Use as a marinade/rub for meat, poultry or seafood

Add to your meatloaf or hamburger mixture

Mix into scrambled eggs

Stir into mashed potatoes, couscous, rice or boiled cubed potatoes

Toss with cooled pasta for a quick pasta salad. Top with shredded parm.

Toss with hot pasta, thin with pasta cooking water, add cooked chicken or shrimp. Top with cheese.

Stir into chicken, shrimp or potato salad

Thin with chicken broth and use as a sauce for meat.

Slather corn on cob instead of butter

Stir into cooked vegetables
