Tomato, Cucumber and Herb Salad with Tuna

My cucumbers are done for the season, vines dried up and bug eaten. Thank goodness for “Farmer John”, he sent back me some delicious white cucumbers with his parents. I finally got a chance to make my tomato cucumber and tuna herb salad, this is a cool, refreshing and a satisfying summer salad.  The recipe below is a “basic” recipe but you can jazz it up for your taste of the day. We like to add kalamata olives, crumbled feta cheese and serve with wedges of pita bread. So, eat this out on the deck or pack it up in a cooler and take it on a picnic, enjoy the taste and beauty of summer in the great outdoors.

Tomato, Cucumber and Herb Salad with Tuna

2 cups coarse chopped tomatoes

Lawry’s garlic salt

1 cup chopped cucumber

¼ cup chopped sweet or red onion

¾ cup chopped mixed herbs such as; parsley, dill tarragon, oregano, thyme, or chives

1 tablespoon extra virgin olive oil

Freshly ground black pepper

1 tablespoon fresh squeezed lemon juice

1-5 ounce can albacore tuna in water, flaked with a fork

Place tomatoes in a mixing bowl and sprinkle with garlic salt. Then continue to prepare the rest of ingredients. Add onion, herbs, olive oil, black pepper and lemon juice; toss until thoroughly combined. If using additional ingredients, mix them in at this time. Add tuna and toss gently until incorporated. Taste adjust seasonings and serve.
