Sesame Snow Pea & Carrot Salad

The snow peas are producing and producing. I wanted to come up with a colorful snow pea salad with flavor and crunch. The snow peas I steamed lightly to retain their crunch, the carrots I used a peeler to make pretty ribbons and added toasted sesame seeds for lots of flavor. I guess this is a new version of Peas and Carrots! Very tasty and easy peasy to make.

 

Sesame Snow Pea & Carrot Salad

1 pound snow peas

1-2 carrots

½ Tablespoon rice wine vinegar

½ Tablespoon sesame oil

Salt and pepper to taste

½ Tablespoon toasted sesame seeds

Place cleaned snow peas in a microwave safe bowl, add a splash of water, cover with wax paper and microwave on high for 1 ½ – 2 minutes until tender crisp. Drain and set aside.

Using a vegetable peeler, place carrot flat on a cutting board, and cut into ribbons. Flip over and repeat. You should have about 2 cups of ribbons.

Whisk together the vinegar and sesame oil; add a sprinkle of salt and a couple grinds of pepper, toss with snow peas and carrots. Add sesame seeds; toss and taste, adjust salt and pepper as needed.

Serve at room temperature or cold.
