Yogurt Dipping Sauce for Veggies

 Artichokes are still in season and we have been enjoying them weekly. I created this yogurt dipping sauce for the artichokes instead of using melted butter. Or try dipping other veggies in it  such as grilled asparagus. I also use it as a salad dressing. I just mix the ingredients in the salad bowl, add your salad fixings and then toss.

Yogurt Dipping Sauce for Veggies

¼ cup yogurt or Greek yogurt

½ teaspoon Dijon mustard

1 Tablespoon extra virgin olive oil

1 Tablespoon fresh squeezed lemon juice

Salt and freshly ground black pepper to taste

Optional minced herbs such as; chives, mint, parsley, dill

In a small bowl whisk together the yogurt, mustard, olive oil, lemon juice, salt and pepper until thoroughly combined. Taste and adjust lemon juice, salt and pepper to your liking. I like mine with lots of lemon. It is very good just as it is. If you would like to add a minced herb to change it up try adding just one herb or a combination of your favorite herbs.
