Savory Sweet Potato Packets with Thyme

As a child I was never crazy about sweet potatoes, they were just too sweet. Remember the marshmallows? Or they were served with brown sugar, cinnamon sugar, praline topping and even more sweet. When my husband and I bought our first house we were invited to the neighbors for a cookout. He was Italian and a great cook. I remember Tom made a rolled, stuffed pork loin on the grill and these sweet potatoes with garlic and fresh thyme. He introduced me to savory sweet potatoes and I loved them! If you’re going to make them sweet, make them really sweet such as sweet potato pie and serve it for dessert. That’s just my opinion.

Savory Sweet Potato Packets with Thyme

Sweet potatoes or yams, scrubbed

Garlic

Olive oil

Salt and freshly ground black pepper

Fresh thyme sprigs

I don’t peel the sweet potatoes, you may if you like. Cube sweet potatoes and place on sheet of foil, I prefer the quick release foil, they don’t stick even if you burn them. Add some minced garlic, as much or as little as you like, drizzle with olive oil, sprinkle with salt and pepper; toss with your hands. Place a few thyme sprigs on top and seal with foil to make a packet.

Place on a hot grill and cook until tender. This will take about 15-20 minutes depending on how much sweet potato you’re cooking and your grill. Flip them around a bit and move them to avoid a hot spot. To test, open packet and pierce with a fork; a fork should easily pierce the potato when done.
