Cool Jicama Radish Salad

On these hot summer days a cool crisp radish and the high water content in jicama make a wonderful combination. I added some jalapeño for a touch of heat, lots of fresh cilantro and a good squeeze of lime, this makes a thirst quenching salad. Ahhh…refreshing.

Cool Jicama Radish Salad

2 cups julienne jicama

1 ½ cups julienne radishes

1 jalapeño minced

1 lime juiced, about 1/3 cup

2 cups snipped cilantro

Salt to taste

Toss all ingredients in a bowl; thoroughly mix and serve.
