Oven-dried Tomato and Mozzarella Appetizers

I had friends over for a 4th of July cookout and swim; it was a fun filled day with good food and great friends. I wanted to make a quick fresh mozzarella and tomato appetizer, but I didn’t have any fresh tomatoes yet, so I used oven dried tomatoes from the freezer and fresh basil. These little bite size snacks were enjoyed by everyone and they were a breeze to throw together.

Oven-dried Tomato and Mozzarella Appetizers

Fresh mozzarella

Basil pesto

Oven-dried tomatoes

Small fresh basil leaves

Salt and freshly ground black pepper

Slice mozzarella into bite size pieces, smear a bit of pesto on top of the cheese; I used fresh from the freezer pesto and added a little bit of extra virgin olive oil to it. You can find the pesto recipe at HomeGardenCook, under herbs and the oven-dried tomatoes under tomatoes.

Top with an oven dried tomato,  drizzle with a bit more pesto, sprinkle with salt and grind some fresh black pepper over all. Add a small basil leaf to each piece. Pretty, huh? Serve with your favorite cracker or enjoy as is. It’s that easy. This would be great to serve with bread and wine.
