Freezing Berries

Farmer John sent back some red raspberries, thanks my favorite! Fresh organic raspberries are very perishable so I am freezing most of them right away. I left a pint out for cereal and yogurt. I love raspberries sweetened with just a bit of sugar to juice them up and spoon them over fresh tapioca pudding. Raspberry is a perfect partner for chocolate as well. I puree them and serve them as a sauce with many chocolate desserts.

Freezing Berries

When freezing red raspberries, black raspberries, blackberries or mulberries give them a gentle rinse first, then drain.

Note: Rinse fresh berries just before use or freezing. Otherwise they start breaking down and getting mushy.

Lay the raspberries in a single layer on a cookie sheet; put in the freezer until the berries freeze solid. Place frozen berries in a container and freeze until needed. As you may have noticed I did not do this process with the fresh strawberries. I find that strawberries are a sturdier berry and are fine when rinsed, drained and placed directly in the container.
