Cucumbers with Sour Cream and Dill

My Polish Grandmother always made a side dish with cucumbers, sour cream, fresh dill and thinly sliced onion.  It is cool and refreshing so we have it a lot in the summer, I just love the fresh dill. I’m writing down the ingredients and you can make it to your likening. My Dad uses mostly onion in his, but I wonder what my Mom does. She doesn’t care for onion so maybe they make separate bowls. It’s a great side dish to compliment spicy food such as Indian or Mexican; the sour cream and cucumbers help cool your mouth off.

Cucumbers with Sour Cream and Dill

Cucumbers sliced

Sweet onion, cut in half, slice thin

Salt and freshly ground pepper

Sour cream-I use light

Fresh dill, chopped

Slice your cucumbers, peel them if you like, toss all the ingredients into a bowl and mix until combined. Taste; adjust seasonings and serve. I like to make it at least 20 minutes prior to serving; the salt will release some of the cucumber juice and the make the sour cream thinner. Just stir before serving. Refrigerate until needed.
