Apple Cheddar Prosciutto Bites

Our last Bunco theme was “Simply Bunco”, come as you are and bring a dish made with 6 ingredients or less. It was a great idea Sandy. I knew I wanted to do something with apples and I had a store bought (yes, can you believe it?), pie crust in the freezer. I don’t like the store bought pie crust for pies but it’s great for making a quick savory appetizer. Well, I did it with things I had on hand, no need to make a grocery run and the Apple Cheddar Prosciutto Bites came out great. A perfect sweet, salty, savory bite of goodness.

Apple Cheddar Prosciutto Bites

1 pie crust

Apples, peeled and cored

Extra sharp aged white cheddar cheese

Prosciutto

Brown sugar

Fresh thyme or rosemary

Preheat oven to 450°

Roll out the pie crust a bit and using a pizza cutter, cut into single size portions. As you can tell mine are rustic, meaning not perfect. Don’t worry, once you get the toppings on no one will notice and it gives them character. Place a silpat mat on a cookie sheet. If you don’t have a silpat pad, don’t sweat it; simply spray your baking sheet with cooking spray. Place pastry pieces on cookie sheet; use a fork and prick the tops of the dough. Bake for 5 minutes. Remove and turn oven down to 375°.

Chop apples into small chunks and place on top of the pastry. I used 4 apples but they were small. Cut/break the cheese into small chunks, place on top of the apples. Slice the prosciutto into crosswise ¼ inch slices, separate slices and break in half if needed and place on top of the cheese. Now take a generous pinch of brown sugar and sprinkle on top of the prosciutto. This will make it crispy and give it that sweet and salty deliciousness.

Place in the oven and bake for 12-15 minutes or until pastry is lightly brown and the prosciutto is slightly crispy. Sprinkle with thyme leaves or minced rosemary and serve.

I think this topping would be good on sliced baguette bread and my hubby suggested a triscuit cracker.
